Expressing traditional Japanese hospitality through Tea Kaiseki and Sushi

Kaiseki Fuji is in a quiet residential district 10 to 15 minutes walk from JR Shinagawa station and only 5 minutes on foot from Takanawadai Station on the Asakusa Line. This Kyoto-style Kaiseki and sushi venue allows guests to experience both sushi and the traditional tea ceremony's Kaiseki cuisine in one place. The venue's young head chef, Yasuhiro Fujii, makes good use of his years of experience of working at Japanese cuisine and sushi restaurants in Ginza and Ebisu by opening "Kaiseki Fuji" in the autumn of 2015.

The Tea Kaiseki-style cuisine is served as reservation-only course meal in both the lunch and dinner service.The handmade "nigiri" sushi served as a finishing touch in all courses are made mainly with seasonal fish topping shipped directly from Nagasaki combined with exquisite sushi rice made of either red vinegar or rice vinegar. Courses of 10,000 yen and over features a handmade traditional Japanese sweets with freshly-whisked, fragrant powdered "matcha" green tea. There is also, of course, a rich selection of carefully-selected Japanese sake that excellently pair with Kaiseki cuisine and sushi.

The traditional Japanese-style interior features tatami flooring as well as traditional beautiful wooden sunken counter seating and separate private-room seating in addition. Behind the counter is a traditional Japanese tearoom. This is a space where guests can fully enjoy a meaningful time with delicious Kaiseki cuisine while chatting with the head chef over the counter.

Located not far from the Grand Prince Hotel Takanawa and the Sheraton Miyako Hotel Tokyo, the traditional Japanese style with tatami mats and sunken seating, is perfect for entertaining guests from overseas and is also an excellent place for dining receptions and group outings. It is also rare among traditional Japanese restaurants to be open on Sundays, a welcoming service. With cuisine prized by its patrons, it is no wonder that over 9 out of 10 guests are repeated regulars.

    鮨懐石との出会いが新鮮で 東京エリアでもかなり難易度の高い 日本料理を展開している店主の力量に 魅力を感じました。 お料理一品毎の完成度も高く お献立の流れも鮮やかに間合い良く 進められて慈の味わいを堪能させて頂きました。 特に焼き物では 鮎の一夜干しは鮎固有の旨味を ここまで凝縮ができるものかと感心します。 更に八寸の美しさは 見てるだけで楽しくなります。 オリジナルブランドの酢飯と種の厚みの バランスの良さはお口の中で種と舎利の 絶妙なマリアージュを頂きました。 楽しく嬉しい至高のひと時を頂き 感謝申し上げます。
