In January 2020, the restaurant was moved from Azabu Juban to Ginza and started anew as “Ginza YOSHI”. The two chefs from "Caudalie" in Ueno work together to create a feast of French cuisine by using seasonal ingredients from around the world.
Yutaro Sakurai, who has been working here since the previous location in Azabu Juban, has also worked at Mikuni Groups, bistro "a la plage" in Atami and etc. After working as a sous-chef at a restaurant in Paris, France, he was put in charge of the sous-chef in "Caudalie" in Ueno as he returned to Japan. Shinichi Inaba, the other new chef, worked as a chef at "QED Club" and "La Colline" in The Agnes Hotel before working at "Caudalie". He also spent about a year in France studying wine. "I want to make something that will leave a lasting impression on customers and make them remember that it was delicious," he said.
In the “Ginza YOSHI” course, meat and fish are cooked over charcoal. The sashimi, shark fin, porcini chawanmushi, and the minced meat cutlet made with the rare part of Matsuzaka beef (offal) are also popular. Dessert is also worth-mentioning, roasted green tea are also available. The restaurant always has 70 kinds of wine that they are proud of, and sake that goes well with the cuisine.
