"Takumi Tatsuhiro" is an Edomae-style sushi restaurant located near Shinjuku Gyoen in Tokyo. Following the tradition of the famous sushi restaurant "Sushi Sho", customers can enjoy the unique style of enjoying side dishes in between sushi.
Before opening his own sushi restaurant in August 2012, chef Tatsuhiro Nishi has gained a lot of experiences in Japanese restaurant in Kanazawa and several sushi restaurants in Tokyo, including "Sushisho" in Yotsuya. He not only gets his ingredients from Tsukiji, but also directly from Hokkaido, Kyushu, and Ishikawa. It is very important that the vineger rice balance with the seafood, the chef uses the "Hana Mizuki" rice from Ishikawa Prefecture, which is also his hometown. The chef visited the rice field, which is in a mountain that is surrounded by abundant nature, and talked with the producers before purchasing the rice. And for the sushi vinegar, the chef uses the blend of Fuji vinegar's red vinegar and rice vinegar from Kyoto's "Iio Jozo Vinegar Brewery". The vinegar brings out the flavor of the rice that matches with the seafood and creates a great combination. The chef serves the "omakase" course with the ten appetizers in between the 12 sushis, this tempo prevents customers from getting tired and full while satisfied with the course.
There are ten seats at the main counter. The interior is decorated with beautiful polished wood which gives customers a comfortable environment. This restaurant is not only suitable for sushi dates and with a group of people, but also alone. There is a private room (up to 6 guests) where customers can use to bring important guests.
From June 2017, one-minute walk from "Takumi Tatsuhiro", their other sushi restaurant "Sushi Band" is opened.
