In a quiet residential quarter, 15-minutes walk from JR Miyazaki Station stands the sushi restaurant "Isshin-zushi Koyo". Since being founded in 1973 by the current owner’s ancestor Kazutaka Kimiya, the sushi-making techniques have been passed down through the generations, attracting many guests, and winning a popularity that has meant constant reservations coming in from across Japan and the world.

"Isshin-zushi Koyo" offers the unique charm of “Miyazaki-mae” style sushi, made of from fresh, seasonal catches from the region, paired with wine or sake. The main sushi chef is Ryosuke Kamimura, who returned to his hometown of Miyazaki after spending ten years studying under Haruyoshi Sorakubo, as his chief assistant in his Osaka sushi restaurant, immediately after finishing high school at the age of 18. The restaurant’s service is managed by Kazumitsu Kimiya, who inherited the sushi restaurant from his father, who has to lead the restaurant is spreading nationally. Kazumitsu studied service management while at the popular Yokohama Italian restaurant SALONE 2007.

The restaurant’s sushi rice is made with adding rare honey from Miyazaki Prefecture (mixed flower honey from Japanese bees) to the vinegar and combined with the natural flavor of the exactingly selected seafood, to create a delicious, natural flavor. Additionally, the wine and sake served at Isshin-zushi Koyo are paired with the food by a licensed sommelier sake taster, who considers carefully how each drink matches the flavors of the dishes. Meals can be purchased as individual sushi orders, sushi and relish orders, sushi and a-la-carte combinations or as full sushi courses, with wine and sake pairings fitting each.

The restaurant is located at the end of a stone path approach, which, upon entering, looks out through a large window onto a garden, creating an open feeling. Seats are either along the 7-meter cherry wood counter, sitting 12, or on private rooms of various sizes. Private rooms for 2 people, as well “hori-godatsu” rooms (rooms with sunken tables over a specially dug out hole) with their own bathroom are also available, making the restaurant perfect for dates, entertaining, and meals with friends, as well as important occasions such as betrothal presentations.
