A French restaurant which acts as the salon of Hiroshima’s political and business circles

On the 2nd floor of a building in Noborimachi, an upper-class residential area of Hiroshima, one can find “le triskel”, a restaurant which led the way for French cuisine in Hiroshima in the 2000s. This famous old French restaurant is known to any and all gourmets in Hiroshima.

The owner-chef Motohiro Yuzaki, trained at world gourmet guide award restaurants in France, Italy, and Switzerland from the late 1970s to the 1980s. At the IKA Culinary Olympics in 2000, he led the Hiroshima team to a bronze medal. That the same year, he opened “le triskel”. The one to name the restaurant was Patrick Joffroy, who is still close with Chef Yuzaki. The restaurant hosts visiting artists and musicians from around the world, and it plays the role of a salon for the businesspeople and politicians of Hiroshima. Chef Yuzaki also judges chef competitions held in Hiroshima, whence young chefs fly off to France’s world gourmet guide award restaurants.

Since the 1970s, Chef Yuzaki has followed the context of French cuisine earnestly, approaching food which is “properly delicious.” His specialty dishes—such as his lobster terrine and his foie gras beignet inspired by Chef Gille Epié of Miravile in Paris—which he has improved upon for 18 years, convey the chef’s sincerity towards food. His lobster dishes, which have carried on the esprit of Patrick Joffroy, are particularly fine dishes worth tasting. His dishes are also well-balanced in their use of many local terroir ingredients, such as Hiroshima beef, fresh sweetfish from the Otagawa River, and ""Mirasaka Fromage"".

“le triskel” stores approximately 200 types of wine in its own cellar. The majority are Bordeaux and Bourgogne, with wine from the 5 premier chateaux (Lafite-Rothschild, Margaux, Latour, Mouton-Rothschild, and Haut-Brion) and DRC also available. The restaurant also has carefully stored old wine, so the oenophile should inquire about making a reservation. With private rooms, vegetarian, kid, and low-calorie menu options available, prior consultation can help the restaurant fulfill many requests.
