A sublime sushi-devotee chef, and carefully selected sake

Hidden door, pass through the restaurant curtain, and you are met with the beautiful 6-meter counter of Japanese Tōnō cypress, sent from Sanchong. And standing behind the owner-chef Riku Ōtomo, who achieved independence at the early age of 33.

For 16 years, the chef Riku built on his passion for sushi through study in the sushi bars of Tokyo from the age of 18. After setting up independently, he continues to make his way to Tsukiji fish market every morning, lay in only those ingredients that meet his standards, check the condition of the fish as he carries out preparation, and serve it as dishes of the highest quality. Painstakingly layering ordinary processes one by one and transforming them into top-quality sushi is Riku’s style - in early summer, Rishiri Island sea urchin at the peak of its pre-spawning deliciousness is transformed into nigiri; splendid alfonsino is grilled and tops rod-shaped sushi; “Toro-taku nigiri” is created using Takuan(radish pickles) marinated in standard tamari soy sauce; and more. Processed toppings are assembled in the ice-filled display case and wooden box facing the customer, and are a visual means of heightening customers’ anticipation. His sincere attitude towards his work extends to his response to customers. Riku wants to face everyone with seriousness and dedication. Even if it is your first time visiting the restaurant, he guarantees that you can spend time in comfort and free from tension.

The collection of alcoholic beverages includes more than 10 kinds of Junmai sake, champagne, wine, and whiskey, chosen with great care and with consideration to sushi pairing. They are reasonably offered by the half-gō (0.9 l) or the glass, tasty bar snacks whet the whistle, and the majority of guests enjoy the pairings. The counter seats eight, and one semi-private room seats up to six. Recommended for corporate entertainment, dates, anniversaries, and also for spending time with family, as children above elementary school age are also welcome.
