Japanese Restaurant Moves from Toyama to Kyobashi, Tokyo, to Start anew

In the late summer of 2023, "Japanese Cuisine Yamazaki", which is often mentioned as a must-visit restaurant when visiting Toyama, relocated to Kyobashi, Tokyo, and made a new start.

The owner-chef, Mr. Koji Yamazaki's life as a chef began with a restaurant in Toyama. He spent 5 years in Toyama, to then go on to master his craft in Osaka's ""Nihonryori Kagaman"", and other Japanese restaurants in Tokyo, Kanazawa and the like. It was in 1996 that he set his mind on bringing joy to the people of his hometown of Toyama, where he seized the opportunity to go independent and open ""Yamazaki"" under his own name. When it comes to cooking, what Mr. Yamazaki finds most important is his sixth sense. That is his answer as to why, for example, even when creating a dish from the same recipe, no two chefs will produce a dish which tastes the same. Not only does he rely on his skill at cookery and the quality of ingredients, but also his sensibility and intuition about the tastes of his guests. Through this, he is able to use the ingredients to their full potential and make the sublime flavors of his cuisine.

The main ingredients used come from the bounty of Toyama's sea and mountains. The Japanese sake that is paired with them is those locally brewed in Toyama, along with others that have been carefully selected to match the cuisine. Mr. Yamazaki's original ""glass shrimp salted kombu,"" made from local ingredients, is still alive and well.. It is a dish which can accompany sashimi dishes in place of soy sauce or salt, be enjoyed as an appetizer with drinks, or simply as an accompaniment to rice. While keenly paying attention to such seemingly minor things as the level of heat on the stove or the pace at which our guests enjoy their meals, we offer personalized cuisine and hospitality to each of our guests. This is an expression of Mr. Yamazaki's wish, which is to allow our guests to forget about time and relax in the present moment.

Located just off the street near Kyobashi Station, the restaurant has eight seats at the counter on the first floor and a private counter room for up to six people on the second floor. The interior and tableware are simply furnished for a relaxing dining experience, creating a quiet and cozy atmosphere.
