A world gourmet guide award wagyu beef cuisine restaurant in Ginza

Located on the 4th floor of a building in Ginza 8-chome. Opened in 2016, ""Ginza Ishizaki"" is a restaurant specializing in Japanese wagyu beef dishes with a secluded atmosphere. The owner Yoichi Ishizaki built up experience at several restaurants in the Tokyo area and was involved in ""Kato Gyunikuten Ginza"" from the start, serving as chef and manager for 7 years before going independent. Possessing exceptionally good taste and competency, he earned a world gourmet guide award just 1 year after opening.

The wagyu beef they source is restricted to A5 rank heifers only, mainly the highest grade Ota and Matsuzaka beef. Starting with their house specialty, Sirloin with Homemade Ham Salad, the extensive menu features Kuroge Wagyu and Seasonal Seafood Tartar, Beef Tongue Simmered in Red Wine, hamburgers, mince cutlets, sukiyaki, and more. Each cut of wagyu beef is prepared in an optimal way, letting you enjoy all the appeal their beef has to offer. What might fairly be called the pinnacle of their beef dishes is the steaks, which they cook with a unique method to be crispy on the outside and tender on the inside. They use beef with rigorously regulated storage methods to control the optimal moisture level, first heating it in sesame oil to warm it. It is then left to rest for 30 to 40 minutes before it is moved to a frying pan and heated to pan-fry it in plenty of sesame oil, cooking to an exquisite balance of aroma and juiciness. The multiple course meals let you choose from 3 to 5 cuts, and even order an assortment of 3 varieties, so be sure to try and compare different cuts. The beverages paired with their superb beef dishes include a selection of 60 to 70 vintages of wine, mainly from France and the US, as well as whiskeys recommended by owner Ishizaki. It has a selection of rare Japanese whiskeys, so it is highly rated among guests from overseas as well.

The interior has 6 counter seats and 6 table seats extending beyond them. Elegant furnishings befitting Ginza and the sense of spectacle offered by the view of the chef at work from every seat create a special experience for guests. The attention paid to providing high-quality service extends to the cutlery as well. Specially ordered from Bo Project, the chopsticks are made from oak barrels used to age Nikka Whisky, with the story behind the material enhancing the feel, and you can even take them home as a souvenir. Perfect for entertaining clients, dates, anniversaries, and even family outings, on special occasions this restaurant offers satisfaction that exceeds expectations.

    Every course was perfect and surpassed expectations. An exquisitely wonderful experience that worthed every penny. Strongly recommended for anyone looking for masterfully prepared Waygu dishes in a cosy and elegant dining room.

    コロナ前に伺って以来でした〜 中々行けず。。 ずーっと行こう行こう思っていて久々に行けたし、彼とも行けたので。 やはり変わらず美味しいし、距離感が好きなお店のままで、定期的にまた、お邪魔したいと思いました。 かき氷全制覇で、、 ワインもまた飲みに行きたいです。 今宵は有難うございました。
