“L’EAU” is a French restaurant located in Minami Aoyama, Tokyo, a gourmet town full of up-and-coming restaurants. New styles of French cuisine are created by mixing powerful and delicate ingredients, nurtured by the natural elements of Japan, with modern tastes.
Chef Takamitsu Shimizu grew up watching his father run a French restaurant and began his culinary career at “Mikasa Kaikan,” an Italian restaurant in Ginza. After that, he worked as a chef for 15 years at his father’s restaurant, “Restaurant C’EST BIEN” in Higashi Nagasaki, and in November 2018, achieved independence with his wish to spread a new food culture from Tokyo. “L’EAU” is a French word for water. Chef Shimizu’s wish is for “L’EAU” to be a restaurant where the producers, staff, family and guests can have a close relationship, like “People and Water.” The Omakase course for lunch and dinner is made with seasonal ingredients. The wine, that matches well with the food, is mainly from France. You can also enjoy the pairing course selected by the sommelier.
The underground dining space is based on shades of black and features a design made from stones. The calculated lighting creates a relaxed, calm, and sophisticated atmosphere. Diners can experience the food in this inviting space, suitable for a once-in-a-lifetime meeting with their loved one, such as a marriage proposal or an anniversary date.
