Mr. Anezaki was born and raised in Hokkaido. After training for 9 years in Kyoto and 4 years in Kagawa, he returned to Hokkaido and opened ""Ryoriya So"" in Sapporo in 2005. Its motto - To use the best ingredients of the day no matter what. Personally picking mushrooms and mountain vegetables from the mountains and combining them with pesticide-free vegetables purchased from local farmers, Mr. Anezaki assembles the menu for the day, producing food through which diners can ""taste the deliciousness of the raw ingredients"".
