A 1-star tempura restaurant where you can savor the seasonable fresh ingredients in Toyama

"Tempura Takano (Tempura Koizumi Takano)" is a 1-starred tempura restaurant where you can enjoy freshly fried tempura using ingredients in season from Toyama. The chef, Tomoo Takano, showcases his skills at a counter with a live feel.

Mr. Takano, who is from Osaka, trained for about 16 years at the venerated tempura restaurant "Ippo" in his hometown of Osaka before going independent, opening "Tempura Takano (Tempura Koizumi Takano)" in 2013. He chose the location of Toyama based on the recommendation of a former senior co-worker who had opened a restaurant earlier in Kanazawa and pays tribute to him by including his name, "Koizumi", in the name of the restaurant.

The tempura here is fried individually with care in 100% safflower oil, using rigorously selected ingredients in season, primarily sourced from Toyama, and is finished with a light, thin batter in the Kansai style. The firefly squid in early spring and the white shrimp are customer favorites, and the Toyama-grown rice, cooked in a pot, is regarded highly. Mr. Takano says "I want our guests to savor the freshly fried tempura as close to me as possible." The counter, which makes this wish possible, provides premium seating. There is also a wide variety of drinks, with around 15 varieties of Japanese sake mostly focused on microbrews from Toyama, but also including Japanese sake from outside the prefecture. The wine starts with SAYS FARM, in Himi, Toyama, and ranges to the Kenzo Estate in California as well as French wine.

The interior has a relaxed ambiance with an extremely luxurious feel. There are nine seats at the counter and eight seats at tables, so do savor the live experience slowly, listening to the sound of the tempura being fried. Small parties such as family and friends, or co-workers, are recommended. An English menu is available, so tourists visiting Toyama from overseas should feel comfortable dropping by.
