The motto of Kodaiji Jugyuan is "delicious food means safe and secure food." He sources the fish from Nishiki Market every day and gets the best conditioned fish from reliable broker or fish shop. He also uses vegetables purchased directly from farmers and rice grown by producers in Fukui prefecture. All you have to do is keep the ingredients simple and don't overdo them. The dinnerware used includes those made by Rosanjin Kitaoji, Kenzan Ogata, Imari Furu and contemporary artists, as new and old ones.
You should not miss the beverage list, with various wine selected by a sommelier base on the chef's Kyoto cuisine, pairing is also available. In addition to the sake produced in Kyoto, there are also 5 kinds of sake produced in the Hokuriku region, including Kokuryu from Fukui Prefecture.
Kodaiji Jugyuan is located on a large site that is around 2,000 tsubo. It is in a sukiya-zukuri style building that was built 110 years ago by famous craftsmen Asajiro Kamisaka and Sutejiro Kitamura. From the first floor you can see a famous garden handled by Jihei Ogawa, the seventh master gardener of the Meiji period, and from the second floor you can see the city of Kyoto. In addition to 10 counter seats, there are also private rooms (8 rooms), with table seats and horigotatsu.
