In Singapore, he became the head chef himself and was awarded 1-star in "Bacchanalia". The cuisine expressed in “SIGNATURE” is contemporary French cuisine that makes use of high-quality ingredients cultivated by the Japanese season and climate. The menu changes from season to season, and chef Armstrong's passion is reflected in an innovative dish that pursues the depth of taste by dry-aging beef, game meat and wild fish.
There are over 800 kinds of wine and around 6,000 bottles available at any time. The wine is not only from France, but also from all over the world, such as Japan, South Africa, Oceania and America. There are 3 types of wine pairings with 3 to 5 glasses, and non-alcoholic drinks can be served from the Mandarin Bar if you want a cocktail.
There is a main dining room and 1 private room (5 to 10 people). The semi-private space with one side by the window has a private feel and is popular as you can enjoy the view of Tokyo.
