A sushi restaurant that brings the signature sushi and sake of the one-star Sushi Kanesaka to Azabu-juban

A two-minute walk from Azabu-juban Station transports guests to Sushiya Shota, helmed by chef Shota, who trained at the one-star Sushi Kanesaka to hone his sushi-making skills. Shota worked at all four restaurants affiliated with Sushi Kanesaka, including Sushi Isshin in Akasaka, where he served as manager. Then, in November 2019, he opened his eponymous restaurant with a desire to make sushi more accessible.

The omakase menu consists of two seasonal delicacies, 14 pieces of nigiri sushi, and a soup to round out a stellar experience. In particular, the chef excels at sushi topped with marinated fish, which pairs well with the sushi rice he makes exclusively with red vinegar. The often-changing delicacies usually feature a variety of seasonal flavors, made with the best-quality ingredients available at the market he visits every day. The restaurant also offers wines, two each of red and white, champagnes, and seasonal sake, including Hitakami from Miyagi and Kokuryu from Fukui. Each sake is carefully selected to best match the sushi, so try to discover your own preferred pairing!

The interior is elegant and understated. There are only seven precious counter seats, where the chef serves his elaborate sushi on plates crafted by artisan Rosanjin Kitaoji. Chef Shota invites guests to enjoy sushi and sake with family, a partner, friends, colleagues, or guests from abroad at Sushiya Shota, which offers authentic Edomae sushi to a wide range of foodies in the gastronomic hot spot of Azabu-juban.
