When going independent, he chose Kamakura as the location because he wanted to use fresh Kamakura vegetables and seafood that he had been using for a long time. This is the ideal place for owner-chef Matsui, who have loved Kamakura vegetables and seafood since his time in Tokyo.
Based on his relationship with reliable producers, he purchases vegetables from Watanabe Farm in Kamakura, seafood from Kazumaru at Kotsubo Fishing Port in Zushi, and also ingredients from all over Kanagawa Prefecture, including Odawara. The freedom to use Kanagawa truffles and various citrus fruits is a privilege of Kamakura's restaurants. Rather than procuring ingredients for cooking, owner-chef Matsui think of cooking as from the goodness of local ingredients. For example, a dish is made of carrots cooked in various ways and fried fish. It is an attractive dish that features the deliciousness of carrots and attracts many fans. He selected wines that go well with the food, mainly Italian and Japanese wines. Pairing is also available. You can also choose from 10 kinds of non-alcoholic drinks, such as Japanese grape juice and tea.
