Makino was a renowned French restaurant in Kanazawa that attracted locals as well as guests from surrounding regions. Looking for a new challenge, chef-owner Hirokazu Makino made a new start in the summer of 2020, moving the restaurant from Katamachi to a site at Mt. Utatsu which offered panoramic views of Kanazawa City. Thus, MAKINONCÎ was born.
The origin of the name MAKINONCÎ literally means "Chef Makino's House", a renovated space designed for a large table in a dining room, allowing guests to meet and share time together.
Diners can enjoy chef Makino’s dishes, respectful of French culinary traditions -- but not bound by them. A new wood burning furnace was installed in the restaurant, where the highest quality produce is cooked: Organic vegetables from contracted farmers, fresh seafood from the port of Kanazawa, fish caught by the chef himself from summer to autumn, and game meat from a hunter the chef trusts in the winter.
The wine leans mostly towards Burgundy, France, and is carefully selected by the sommelier according to the taste of the food and preference of guests.
