Housed in the Park Hyatt Niseko Hanazono, a luxury hotel in Abuta, Hokkaido, with stunning views of Mt. Yotei and Niseko Annupuri, Sushi Mitsukawa Park Hyatt Niseko is the third location opened by one-star chef Koji Mitsukawa from Kanazawa, Ishikawa Prefecture, in 2020, following the opening of Sushi Mitsukawa Roppoingi in 2019.
Chef Mitsukawa trained at a renowned sushi restaurant in Ginza for five years, and later honed his culinary skills at a sushi restaurant in Düsseldorf, Germany, for three years. Then, in 2005, he returned to Japan and opened his own restaurant, Sushi Mitsukawa, in Kanazawa. The restaurant rapidly gained recognition and won one star for its nigirizushi and elaborate delicacies made with prized local ingredients.
Sushi Mitsukawa Niseko offers the same Edomae sushi as its main location in Kanazawa and sister location in Roppongi. The ingredients are predominantly sourced from three treasure troves: Omicho Fish Market in Kanazawa, which the chef knows like the back of his hand; Toyosu Market, which also supplies fish and shellfish to the Roppongi location; and a local market in Otaru, Hokkaido.
The Niseko location’s signature item is Nodoguro Temaki (rockfish sushi), which is served year-round and ranked among Mitsukawa’s three signature dishes. Another dish, Delicacy of Seiko Crab, is served for only two months of the year from November to December and has also gained great popularity.
The drinks menu offers a selection of fine Japanese sake, including Kuroobi from Ishikawa, Kokuryu from Fukui, Dassai from the chef’s home prefecture of Yamaguchi, and Sushi Mitsukawa’s original Japanese sake. The list also includes champagnes selected by visiting and learning from producers, in addition to wines, also selected via personal relationships with producers, such as Sogga Père et Fils Ordinaire Sauvignon Blanc from Obuse Winery in Nagano.
The restaurant possesses a single counter with 13 coveted seats. Each setting is complemented with carefully selected tableware, including Kutani porcelain, Karatsu porcelain, and Shino ware, as well as exclusively designed Ohi ware cutting boards to serve sushi.
