Even in Nishiazabu, a neighborhood brimming with high-end restaurants, M2 stands out for its superlative prix-fixe meals made with Matsukichi beef, a premier wagyu brand from Matsusaka, Mie, by chef Keiji Matoba, the former corporate executive chef of Aman Resorts. Accordingly, the restaurant’s name stands for the initials of Matsukichi and Matoba.

Chef Matoba trained at Japanese restaurants in The Ritz-Carlton Hotel and the Hotel Okura in Japan, as well as high-end Japanese restaurants around the world. In 2016, he became the first Japanese corporate executive chef of Aman Resorts. As general chef of the Aman Group, he was involved in the development and supervision of three luxury hotels and seven restaurants. In 2020, he was captivated by Matsukichi beef at first bite during his return visit to Japan, and became chef at M2, which was opened in September of the same year.

This legendary beef is sourced from Matsukichi Farm in Matsusaka, Mie. While A5-grade wagyu cattle in general are quickly fattened for 30 months, Matsukichi cattle are grown slowly with traditional feed for 50 months. Compared to other A5-grade cattle, Matsukichi beef cattle grow healthier without stress, and their meat is less likely to sit in the stomach despite its high fat content as the fat melts at a lower temperature. “It is high quality and tastes great,” Matoba points out. M2 also offers tastings of Matsusaka beef and Matsukichi beef in a prix-fixe menu, allowing both connoisseurs and novices alike to compare these two beef brands with respect to sweetness and aftertaste.

The restaurant’s tasting menu is built around healthy and easy-to-digest food, and courses build in complexity. The first course is Matsukichi beef sushi, prepared to allow guests to appreciate the taste of the meat, followed by a warming soup. Then, simply grilled Matsukichi beef is followed by a cup of steamed egg custard topped with yuzu citrus to refresh the palate. The showstopping main course is Matsukichi beef served with tuna, truffle, and foie gras, with a pleasing curry and rice served at the end. To accompany these exquisite dishes, fine wines and sakes are offered to guests.

M2 boasts a stunning collection of artworks by young artists and ceramics by Japanese ceramicists, punctuating a sleek black interior that rarely fails to impress guests. The dining area is separated from the open kitchen by an 8-seat counter where guests can enjoy watching the chef grilling beef on the flat top and crafting sushi. The famed chef who once showcased Japanese cuisine to a jet set clientele now presents his own culinary vision of Matsukichi beef from Japan.
