A carousel-style restaurant hosting guest chefs from around the world, the underlined space in the restaurant name can be filled in with different words, depending on the featured guest chef, region, and ingredient. Usually, the restaurant is helmed by head chef Hideyuki Kon, who specializes in Japanese cuisine, as well as chefs of Spanish, Latin American, and other disciplines, to offer exciting, expressive tasting menus crafted from locally produced seasonal produce and featured ingredients.
