A 1-star innovative French restaurant in Otemachi helmed by a starred chef who takes inspiration from Japan’s unique terroir

A contemporary French restaurant, est opened in September 2020 atop the Four Seasons Hotel Tokyo at Otemachi, a five-star hotel directly connected to Otemachi Station in Tokyo’s business district. The restaurant is run by a pair of starred chefs, French chef de cuisine Guillaume Bracaval and Italian pastry chef Michele Abbatemarco, who worked together at two-starred Cuisine Michel Troisgros in Tokyo.I The restaurant won a 1-star in the 2022 edition of the World Gourmet Guide.

With a deep respect for Japanese terroir, chef Bracaval prepares innovative dishes that blend French techniques and Japanese flavors that showcase ingredients from Japan’s land and sea. It is a one-of-a-kind Japanese-inspired French cuisine using culinary techniques that bring out each ingredient’s true flavor. For example, fish is prepared for cooking like sushi, while other ingredients, including vanilla extract, saffron, and wheat, are sourced from carefully selected local producers. The restaurant is also characterized by a minimalist style, such as a commitment to reducing food waste and a moderate use of butter and cream. Both lunch and dinner menus offer prix-fixe menus consisting of a variety of beautifully presented dishes that celebrate the marriage of French and Japanese cuisine and make each guest’s culinary journey both memorable and a delight to the senses.

A wine list curated by chief sommelier Yuta Yoshida offers a variety of French and Japanese organic wines that reflect his inquisitive and knowledgeable personality, some from family-run wineries selected while visiting wineries around France and Japan. In addition, a non-alcoholic drinks menu offers a selection of mineral waters from Japan’s best springs.

The beautifully appointed interior features a classic design with French and Japanese influences. An elegant and stylish dining area, elaborately decorated with traditional craftworks and stylish finishes, offers 72 seats indoors and 24 seats on an outdoor terrace (only available on sunny days from April to October).

Perched on the 39th floor with stunning views of the city skyline both day and night, est is a perfect place to enjoy an exceptional time while celebrating anniversaries, dining with a partner, and entertaining both business clients and guests from abroad.
