A 5-minute walk from JR Tenma Station brings guests to a townhouse quietly secluded from Osaka’s downtown.

Inside awaits Funachef, a recycling-oriented French restaurant committed to the sustainable use of resources. Chef-owner Yuta Funaoka trained at renowned French restaurants, including Tateru Yoshino in Tokyo and across eight countries, including Melbourne, San Francisco, and Cambodia, and as a personal chef for Keisuke Honda, a former Japanese national team football player. While working abroad, he realized that “food enriches peoples’ minds, so I want to save people by offering them meals.” Driven by this desire, he opened Funachef in February 2020.

The restaurant is committed to making full use of ingredients and sources by minimizing waste and implementing the 3Rs – reduce, reuse, and recycle. Vegetables are sourced from local farmers in Shiga and those committed to sustainable agriculture to ensure that only safe vegetables are delivered. The fish and shellfish are purchased from a local market every morning, selected from the best and available options, and intuitively combined to create a daily changing menu. The inspiration for the restaurant was partly due to the chef gleaning experience preparing meals in countries with limited access to safe water and ingredients.

Additionally, having experienced the rigors of supporting a world-class athlete, the chef offers healthy multi-course meals consisting of some 50 kinds of vegetables. The first course is “cauliflower mousse, three kinds of shrimp tartare, and tomato gelée,” the chef’s specialty that originated from a dish that impressed him in France.

Funachef also offers a pairing with 13 options of wines and Japanese sake as well as refreshing soft drinks including additive-free ginger ale and red perilla juice from Maruki Winery in Yamanashi.

The modern Japanese-style interior is cleverly adorned with repurposed timber and a beautiful contrast of old wood accents and a marble kitchen counter that seats up to 10 guests. The kitchen is also designed to save energy, equipped with analogue fixtures, and stocked with tableware, including Shigaraki, Imari, and Nabeshima ware. Funachef is an outstanding place to entertain clients, dine with a partner or friends, and enjoy one’s own company.
