A classic French restaurant helmed by a chef with a great sense of gastronomy and a vast knowledge of the local bounty of Yamagata

A 10-minute drive from JR Yamagata Station takes you to Restaurant Pas Mal set in a discreet neighborhood. Take a step inside, and you will be greeted by a chic black countertop contrasted with a pop color painting. Behind the counter is an open kitchen, where the restaurant’s owner-chef is seen busily at work.

Hailing from Yamagata Prefecture, Chef Yusuke Murayama entered the culinary industry directly after graduating from high school. He trained at restaurants in Yamagata and Tokyo and then returned to his home prefecture of Yamagata to open Bistro Pas Mal in Tendo, Yamagata, at the age of 25. It was relocated to the current location and renamed Restaurant Pas Mal in 2017. The restaurant offers French dishes based on classic techniques. Especially, Chef Murayama is obsessed with sauces, where the essence of French cuisine lies. In addition, knowing about his home prefecture of Yamagata like the back of his hand, the chef incorporates local ingredients into his French dishes.
The ingredients are mostly sourced from Yamagata Prefecture, including edible wild plants locally picked in spring, game meat (e.g., wild boar and duck meat) delivered in autumn and winter from local hunters on friendly terms with the chef, locally bred lamb, and fish from Sakata such as Japanese Spanish mackerel and cherry salmon. Vegetables are supplied from Verdure italiane di Kahoku, an association in the Kahoku region (a town in Yamagata Prefecture) for research and production of Italian vegetables, which grows Western vegetables, such as white asparagus, in summer and Treviso in winter. Thus, local ingredients are featured, rather than truffles, caviar, or foie gras.
The drink menu offers a variety of wines not only from France but also from Yamagata, which has as many as almost 20 wineries, and Japanese sake from local breweries in Yamagata, including those to be paired with dishes. The pairing menu is flexible enough to allow diners to choose the number of glasses of drinks, depending on the number of courses served, and the amount of each glass. The food is mostly served on refined white porcelain plates crafted by Mr. Takahiro Yahagi, a local ceramic artist, as well as being presented on discreet plates to highlight the beautiful colors of the ingredients. The tables are served by the chef’s younger brother, Tatsuaki, who works harmoniously with the chef.

Inside the restaurant, the first floor is shaded in black tones to add an urban touch to the interior, making a contrast with the second floor in bright white tones. The first floor dining room boasts a seven-seat counter, while the second floor dining room has three tables seating up to 12 guests in total, though the number of guests at one time is limited to 10. The restaurant is perfect for family dinners, anniversary celebrations, and dates but also attracts food lovers, many of whom come alone to enjoy French dishes crafted by Chef Murayama. The majority of diners come from outside the prefecture. The restaurant cannot cater for children under about 12 years old who cannot eat the same meals as adults unless it is exclusively booked.
