Sushi Rizaki Ebisu is located on the third floor of a building close to Ebisu Station. Chef Naoki Shiotani shows his skills carrying on from the main restaurant Sushi Rizaki in Shibuya, which is now so popular it is difficult to make reservations there.

Chef Shiotani learned the fundamentals of Japanese cuisine at the kaiseki restaurant Kikunoi Honten in Kyoto and gained experience in French cuisine at Tsubaki in Nishi-Azabu. After that, he knocked on the door of Sushi Rizaki in Shibuya, aiming to become a sushi chef who can perform his craft in front of customers. He now helms Sushi Rizaki Ebisu, which opened in 2021 as the third branch of Sushi Rizaki after being recognized for his skills honed at a famous Japanese restaurant.

Chef Shiotani wants to dispel the image of sushi restaurants that are inaccessible to the average person, so he keeps prices within reach even for younger customers including those in their 20s. That said, to satisfy even the most discriminating of sushi connoisseurs, Sushi Rizaki Ebisu shares the same procurement routes with and competes with quality on par with the main restaurant. He visits the Toyosu market almost every morning and sources from brokers with who he has tight relationships while also scrutinizing the offerings himself. His tuna comes from Hicho, a popular intermediate wholesaler. The wasabi used is the Mazuma variety cultivated by Koichi Tashiro in Gotemba, Shizuoka Prefecture.

In pursuit of a sensation of the rice loosening and melting in the mouth, the sushi rice is a blend of Tohoku No. 194 and Emi no Kizuna, which have different grain sizes and hardness. The vinegar used is a blend of three types: Hakuju and the red vinegar Kohaku from Yokoi Vinegar Brewing plus Chidorisu from Murayama Zousu. While alternating between serving side dishes and nigiri, the rice is cooked, the temperature adjusted, and vinegar mixed into the sushi rice to match the timing of serving the tuna nigiri, which is the signature item. “Fine-tuning the portions sushi rice while observing each customer is the epitome of preparing sushi at a counter,” says Chef Shiotani.

The restaurant offers 15 labels of seasonal sake in addition to Juyondai from Yamagata, which is stocked year-round. The restaurant offers a wide assortment of wines, both by the bottle and by the glass, including Champagne and red and white wines that pair well with the umami of the sushi. Among non-alcoholic drinks, Sushi Cider made with Yokoi’s vinegar goes well with sushi rice.

The restaurant, which is black in toned with subdued lighting, offers a relaxed atmosphere with an eye-catching 10-seat counter crafted from a single slab of wood. Tin glasses made by Nousaku in Toyama, which are said to conduct heat well, create a stylish atmosphere. Sushi Rizaki Ebisu is used as the setting for a variety of occasions, from dinners for couples, friends, and work colleagues to entertaining guests from overseas.
