Kyobashi Moto, a sake lover's hideout where sake and food are enjoyed as a marriage, will make a new start in March 2023 as "Moto Tokyo" in Yaesu, Tokyo.
The restaurant is located in Yaesu, the gateway to Tokyo and the nexus of various mobility systems, including the Shinkansen bullet train, which connects all of Japan.
Mariko Taniguchi, the proprietress, will offer a lineup of sake supported by a wide range of customers, and Yugo Sakuma, the head chef, who has honed his skills at Japanese restaurants in Ginza and Kyoto, will continue to offer dishes that make full use of seasonal ingredients. This popular restaurant is known as a "hideout for sake lovers" where they can enjoy the marriage of sake and cuisine.
The dishes are "dishes that go well with sake" and are healthier for the body, with less salt and fat, and with the natural flavors of the ingredients being used to bring out the umami. A popular menu item is the "Sake-no-Azaki-Hassun. It is served on a single plate with a small selection of snacks that go well with sake. The restaurant also does not skimp on the ingredients and cooking methods, such as nigiri tuna selected from all over Japan, sashimi made from fish that has been laid down to maximize its flavor, morning duck processed early in the morning, and rare and highly valued brand-name wagyu beef. There are about 80 varieties of sake to choose from. The proprietress says, "We select sake breweries and brewers who are active as a small group, such as young breweries, young people in their 20s and 30s who are changing generations, and family-run businesses, and we would like to convey their dramas as well. The restaurant offers a wide selection of sakes with a wide range of tastes, from refreshing to robust, to suit the cuisine of the day and the tastes of the guests.
The restaurant has six seats at the counter and two private rooms (for 4-6 people).
