The next generation of Japanese cuisine which preserves Japanese tradition and expresses it in new interpretations

"kabi", which was open on November 2017, is located not far from JR Meguro Station. It is a restaurant that catches a lot of attentions because it is run by experienced chef, sommelier, and pastry chef.

Chef Shohei Yasuda has experience in French restaurants and the world gourmet guide award restaurant La Cime in Osaka, as well as experience at the the sous chef for the restaurant Tirpse, in Shirokane, Tokyo. After that he went to Denmark, and worked for the world gourmet guide award restaurant Kadeau. The sommelier, Kentaro Emoto, has trained at several famous restaurants, such as Lecrin Ginza and Aux-provençaux (Kojimachi, Tokyo), along with training in California. After that he studied wine brewing in Australia and worked as manager sommelier for restaurant NORA in Melbourne. Kirk Nakamura, who was a pastry chef at " Tirpse", was also trained in Paris.

These 3 people, who have extensive experience abroad, opened their restaurant with the concept of showing customers “the wonderful food culture of Japan in our own style"".In order to show Japan's food culture, they choose to serve Japanese cuisine rooted in this country, rather than French cuisine.

For example, standard items on the course menu are pickles, dashi (Japanese soup stock), and fish marinated in vinegar. Emoto's pairings for these items are also diverse, including wine, beer, sake, Japanese tea, and cocktails, making new discoveries enjoyable.
Making use of a historic old house built in the 1930s, the restaurant offers counter seating around an open kitchen, table seating, and a private room in the back of the restaurant.
We hope you will enjoy the new world view of "Japanese cuisine" created by young artisans who will lead the next generation, such as the handmade plates, chopsticks, and handmade glasses that were created in consultation with artists and are placed on the tables as much as possible.
