A 1-star genuine kaiseki cuisine interweaved with ingredients from Hakata and culinary craftsmanship

Aji Takebayashi is located in a quiet alley away from the center of Hakata, close to Maizuru Park. Since its opening in 1993, it has always been a famous restaurant in Hakata, where you can enjoy authentic kaiseki cuisine, and has been awarded 1-star.

Takebayashi Yuzuru, the owner of the restaurant, trained at the famous restaurant ""Aji-Kitcho"" in Osaka for 12 years, then returned to Fukuoka, where he was born and raised. While pursuing the genuine Hakata style kaiseki, customers can enjoy a variety of seasonal dishes which use western ingredients and cooking methods. Ingredients are sourced from the Yanagibashi Rengo Market, also known as the Hakata kitchen. Every morning, seasonal ingredients are purchased and the menu of the day is then designed. For example, in spring, pork broth soup with vegetables is served and customers can sense the delicate knife-skill through the finely chopped vegetables, and it is interesting that the soup is garnished with black pepper. In summer, sweet-fish confit which has been cooked to the bone for several hours on a low heat is served. In winter, Hakata Zoni Soup by using kelp, dried shiitake mushrooms and agodashi (a Fukuoka specialty ingredient) is served. Depending on the course budget, there is only the recommended course. At lunch time, there are also Shokado bento boxes and other courses available, so customers are able to casually enjoy the taste of a world gourmet guide award lunch. The sake starts from Japanese sake from local Fukuoka which is difficult to find elsewhere, to an arrangement of around 10 carefully selected drinks from all over the country is available. These drinks really bring out the flavor of the ingredients in the dishes.

The elegant interior is furnished with an Ajiro ceiling which is traditionally used in tea rooms, and a wooden-counter made from oak. The restaurant is arranged with Italian cassina chairs, which are comfortable to sit in, and large, custom-made table seats, which are designed so that guests can relax. Customers are truly able to enjoy their meals comfortably, with the gentle personality of Mr. Takebayashi, and the pleasant hospitality of the staffs.

    Amazing. Chef Takebayashi and his team had prepared every dish with their heart and soul. They made the night so memorable from the choices of ingredients and cooking techniques. It is also surprising that they have kept the price of the meal so reasonable. Definitely will visit again in our next trip to Fukuoka.
