Mr. Daisuke Miyashita, whose activities encompass a wide range of fields and genres, and has produced several restaurants and commercial facilities, such as “Kurayamizaka Miyashita" in Azabu-Juban, has opened a new Japanese restaurant “Kafuka Tokyo” in the same Azabu-Juban area, which signals a “return to his roots.” Having opened in May of 2015, Mr. Miyashita himself is present at the restaurant, wanting to develop a form of personal communication through dining, and having a face-to-face relationship with both his guests and the challenges of Japanese cuisine.
This restaurant philosophy of cuisine is to prepare food that pairs wonderfully with Japanese wine and sake, with an original essence added to a traditional base of Japanese cooking that utilizes farm-fresh domestic ingredients.
Furthermore, Mr. Miyashita’s desire to create a place where guests from overseas can encounter Japanese cuisine has led to the development of an English-language menu and vegetarian dishes. His work has led to widespread notice from overseas for Japanese local producers, Japanese ingredients, and the culture of Japanese cuisine.
His attention to detail extends to the interior design as well, with an expansive maximum of 140 cm of space for each diner in a 12-seat counter with a fully open kitchen.
