After more than 20 years of honing the skills at the well-established sushi restaurant "Rokubei" in Ningyocho, Mr. Satoshi Ichijo opened his restaurant "Sushi Ichijo" in November 2015. The location he chose for his independent venture used to be the site of Miyakozushi (which has moved and is now called Nihonbashi Kakigaracho Sugita). Mr. Ichijo used to visit the main location of Miyakozushi with his family often when he was in elementary school. At that time he looked up to the sushi artisans there and aspired to become one himself, making this a meaningful place for him. “Without being flashy, doing the basics properly and consistently is important to me,” he says. He procures good fish, keeps his shop clean, and engages with the sushi earnestly. He offers orthodox Edomae-sushi while protecting tradition.
Mr. Ichijo is particular about using natural seafood from the seas around Japan, and he is strict about choosing only those ingredients in season. Seafood which has served traditional roles—such as vinegared Kohada, melt-in-your-mouth cooked clams, and conger eel with sauce and salt—are harmoniously married with vinegared rice which has been given its essential acidity with red vinegar. “I strive to run a sushi restaurant which will stick in your memory and make you want to come again after you finish eating,” says Mr. Ichijo even as he carries out his words by skillfully pressing each and every piece of sushi with all his soul, as though he were facing a real test. The sake is selected not to interfere with the sushi, and seasonal recommendations are offered. In addition to the taste of the sushi, Mr. Ichijo is particular about the restaurant’s interior, making every detail shine with authenticity. The shop’s name, Sushi Ichijo, has an atmosphere about it, and the characters are written by calligrapher Undo Inamura.
The chef is well versed in traditional earthenware and uses dishes of his own taste and choosing, from creations by Japanese living national treasures to works by modern artists such as Ryo Mikami.
