A man of talent who has received world gourmet guide award at "Robuchon" passes on French cuisine along with the history of Shirokane-dai.

""Restaurant L'allium,"" which has taken over the former site of old French restaurant ""OZAWA"" in Shirokane-dai, opened in 2018. The owner-chef, Yoshiaki Shindo, practiced French cuisine under ""French Kaiseki Shukouju"" (presently closed) in Motomachi, Yokohama, went on to ""L'Atelier de Joël Robuchon"" in Roppongi, ""Bon Pinard"" in Moto-Azabu, and returned as the sous chef of ""L'Atelier de Joël Robuchon"" in 2007. In the following year 2008, ""L'Atelier de Joël Robuchon"" received world gourmet guide award, and after becoming at chef at ""Gentil H"", it received world gourmet guide award in the first year.

The concept is ""modern grande Maison"". What chef Shindo aims for is the stability of Grande Maison (a term used in Japan for the highest–class French restaurants), and a relaxing atmosphere that isn't too tense. ""In a time in which authentic Grande Maison is starting to disappear, I want to pass on the 30 years of history that my great senior Ozawa chef has built up, and provide the finest service,"" he states with a sense of determination. He focuses his dishes on valuing the ingredients in season and bringing out their natural flavors to the fullest. He selects ingredients from all over Japan, and in regards to the vegetables, there are many that he buys directly from the producers, based on their varieties. Mr. Shindo's specialty is a dish of black abalone from Shimane prefecture, that is slowly steamed for 8 hours to create the perfect softness. It is a dish that has lasted since the ""Gentil H"" days, with many guests visiting just to have a taste of it. Many guests visit the restaurant for this reason. The wine selection is centered on Burgundy and Champagne.

The interior, inspired by concert halls, are made for sounds to echo against the wood. The movements of the guests create sounds that become one—the music of the restaurant. There are counter seats by the open kitchen, 16~20 table seats, and a luxurious carpeted private room (for 2-6 people). We would like you to dine with the silverware of Christofle, passed down from ""OZAWA,"" and ponder on the possibilities that ""modern grande Maison"" holds, along with the history of ""OZAWA.""
