Italian restaurant offering northern Italian cuisine with Japanese ingredients

Nihonbashi is a part of Tokyo that has developed as a center of commerce and culture since Edo period times. “farsi largo!” is located in the heart of Nihonbashi, right by the Coredo Muromachi commercial complex. The owner-chef, Hidenaga Tsuji traveled to Italy after 5 years training in restaurants in Tokyo. There, he studied authentic north Italian cuisine in restaurants such as ""La Contea,"" a province in Piedmont, north-west Italy that boasts white truffles as its specialty product; ""Albergo Ristorante Verbano,"" which specializes in dishes made from fish caught in Lake Maggiore; and the world gourmet guide awarded restaurant ""Da Vittorio"" in Lombardy. After returning to Japan, Chef Tsuji further developed his skills by working in Italian restaurants in Tokyo. The winner of awards such as the Italian Food Championship on the TV Tokyo program TV Champion and the Grand Prix Cooking Award, Dolce division, Italian Chamber of Commerce Japan, he has a dazzling CV. In 2010, he went independent and opened ""farsi largo!"" which saw a refurbishment and re-opening in 2018.

Chef Tsuji feels it is important for his customers to enjoy pairing wines with authentic northern Italian cuisine, food that offers the chance to enjoy seasonality with all the five senses. He devotes himself to the selection of his ingredients. He is especially particular about seafood and vegetables and receives direct deliveries of fresh seafood caught in Suruga Bay from a long-established fishmonger in Yaizu and organic Italian vegetables from a farm in Chiba. The Italian regional cuisine that he creates from these ingredients carries on the traditions of a flavor that would make even Italian customers nicely contented.

The interior of “farsi largo!” features a modern mood with European-style white walls and is unified to create a warm space with wooden chairs tables and wooden tables that were handcrafted by an artist. Both lunch and dinner are limited to 3 to 4 groups of customers, and the restaurant can also be rented out for dinners and business entertainment. It is also suitable for casual meals by groups of female customers. “farsi largo!” means to “clear the way on your own,” so it is also a spot that we would recommend for celebrating a new beginning with that someone special.

    一品、一品、素材を大切にしたシェフの気持ちが感じられるお料理でした。九州人で関門の魚のおいしさをよく知っている私ですが、お魚料理が特に美味しかったです。仕入れにこだわっておられるのでしょう。こじんまりとした店内で、ご夫婦でなさっておられ温かみを感じられる雰囲気も気に入りました。 デザートの黒トリュフを使ったブラマンジェは、クリーミーでお口の中で香りも広がり、コーヒーとよく合いました。 今回は研修のため東京へ行き、友人とともにお料理を楽しみました。東京在住でしたら、ぜひ贔屓にしたいお店です。また伺いたいと思っています。
