Located on the 3rd floor of a building on the main street in Ginza 8-chome. When you climb to the 3rd floor with the small sign reading “SUGAWARA” as your guide, "Sushi Sugawara" comes into view, with its tasteful approach exuding the sense of class one expects of Ginza. The proprietor, Hideki Sugawara, earned experience at established Ginza sushi restaurants and has been devoted to sushi for 30 years. In 2018, he opened his own restaurant in Ginza.

The chef’s selection course(Omakase) is the standard style. It starts with simple, yet carefully crafted side dishes which bring out the flavors of the ingredients, and moves on to nigiri sushi. Sugawara treats each ingredient and each guest seriously. “With modesty and sincerity, I want to provide excellent service to every customer who takes the trouble to come here,” he says. “Treat with care” is his motto for seafood as well, and every day he sources only ingredients he has seen and inspected with his own eyes from Toyosu Market. The mild sushi rice uses a blend of rice vinegar and red vinegar and has a flavor that is not overpowering, balancing well with the painstakingly prepared seafood. "Sushi Sugawara" also employs a sommelier and Japanese sake master, so the chance to enjoy the pairings of food with wine and sake is part of the appeal. In particular, there is a diverse lineup of sake to be able to complement the sushi as well as guests’ individual tastes, with a selection of 8-10 varieties that rotates with the seasons.

The neat and tidy interior is equipped with 9 counter seats as well as private rooms. Seating is arranged around the high-ceilinged space to afford guests generous room, and the relaxed ambiance exudes the refined elegance befitting a high-class sushi restaurant. In addition to providing English menus, they also have English-speaking staff members.
