Iwase Town is a port in Toyama that has flourished by Kitamae-Bune since the Edo period. “Cave Yunoki”, is located at the Mori Family's Dozougun, one of the many splendid buildings of Kaisen Donya that are reminiscent of the prosperity of those days. It is a famous restaurant which received the award in a well-known gourmet guide for Toyama Ishikawa (Kanazawa) 2016 and 2021.
Chef Eijyu Yunoki studied French cuisine in Toyama Prefecture for 3 years and honed his skills at a French restaurant in Tokyo after moving there. After returning to his hometown and working as a hotel chef for several years, he has been working at his current restaurant since 2009. Chef Yunoki, who knows all the ingredients of Toyama, where he was born and raised, including fresh seafood called "Kitokito fish". 90% of the ingredients used are locally produced, purchased directly from fishermen or other merchants. "We respect high quality ingredients from Toyama and aim for natural cuisine" says Chef Yunoki. While their dishes are based on French cuisine, the ingredients and amazing techniques are taken from different genres and brought together beautifully to create dishes full of originality. They have everything from game meat that is carefully baked in a special kiln to special seasonal ingredients from Toyama. The sake line-up is also inspired by Toyama, and you can enjoy a wonderful combination of sake and ingredients grown in the same location, paired with the food.
The spacious interior, which is a renovated 100-year-old warehouse (Cave), has beautiful beams and pillars on the ceiling, giving guests a profound feeling of history together with the comfort of being invited to the living room of a friend. In addition, Iwase is also a town with many creative artisans, and the fact that it incorporates many of the works of local glass artists, ceramic artists, wood carvers, etc. is a characteristic of “Cave Yunoki”, and all the dishes, containers, and space create a value that can only be experienced here. The dinner is limited to one group per day, so there are many guests who come from outside the prefecture for family anniversaries and entertainment.
