A sister-restaurant of “Sushi Rinda”, this is an Edomae-style sushi restaurant where you can enjoy cuisine crafted by young chefs

“Ranmaru” is a sushi restaurant located in a quiet residential area near Fudomae Station in Meguro, Tokyo. According to the desire of the master of “Sushi Rinda”, located in front of Fudo-mae, "I wanted to make a shop where young craftsmen could make sushi". As a result, “Ranmaru” opened as a sister-restaurant, originally serving Uwajima udon and sushi. Today, chef Yukichika Shimazu, at the young age of 25, is in charge of restaurant.

The rice for the sushi is Koshihikari from Niigata. The rice is cooked in a pot under pressure, trapping moisture in the rice grains, and is mixed with a blend of rice vinegar and red vinegar with a small amount of sugar. The best seafood of the day is purchased through any means necessary, including shipping it directly from local fishing ports, as well as Toyosu market. The special Futomaki roll, "Ranmaru rolled sushi", that is served at the end, uses plenty of tuna, from lean to medium fatty meat. Another popular dish is the "Ranmaru special rolled sushi", in which sea urchin and salmon roe are placed on top of the "Ranmaru Rolled Sushi".

There are around 10 types of sake, including seasonal sake, carefully selected from all over Japan. Champagne and wine are also available. In addition, there is a variety of Uwajima mandarin orange juice from Ehime prefecture that is made at the home of Yuta Kono, the chef of “Sushi Rinda”. You can enjoy it as a soft drink or as a dessert.

The restaurant has 10 counter seats. The counter, coated with Japanese cypress, is set at a high position as a remnant of its past as an udon restaurant, so it is a perfect position for taking photos of sushi. Conversations with chef Shimazu naturally becomes lively when dining here. We would like you to enjoy the youthful “Ranmaru” for your private use with your fellow sushi lovers and family members, as well as for dates and entertaining.
