A Japanese restaurant in an a renovated house, always offering new dishes while preserving the old.

Summer 2023. The one-star Japanese restaurant "Kyomachi-Ryori Mitsuya" near Utsubo Park was relocated to the town of Gamo in Joto-ku, where an old house still retains the atmosphere of the past, and made a new start as “"Oriyori Matsumura.“”

The owner, Tomonori Matsumura, started his career in the culinary world when he worked at a steakhouse in Kobe. After 10 years at "Uosaburo," a Japanese restaurant in Fushimi, Kyoto, he left for France to further his education and broaden his horizons. There, he worked not at a Japanese restaurant, but at four Parisian bistros and gastronomy restaurants, learning only French cuisine and bringing a new style to his own cooking. After returning to Japan, he opened "Kyomachi-Ryori Mitsuya" in 2014, The restaurant has now moved to this new location, hoping to revitalize the old private house and to make use of the old traditions in cooking new dishes.

Mr. Matsumura's concept is "to be more like the ingredients than the ingredients themselves. He procures the best ingredients from all over Japan and focuses on seasonings. He carefully selects and uses what he believes to be the "real thing," such as soy sauce made from traditional, authentic whole soybeans, mirin (sweet sake) that has been aged for three years, and naturally fermented vinegar. One of the dishes that Mr. Matsumura focuses on the most is "shinjo," a bowl of soup. The lightness of the shinjo, which loosens and cracks the moment one puts one's chopsticks into it, is second to none. The soup is not seasoned in any way so that the flavor of the ingredients comes first, and the flavor of the ingredients can be savored. In the "vegetable shinjo" dish, the white onion is sauteed in oil, cooked with fish ara, and then blended with a blender to create the surimashiri-style dish, which is a technique used in French cuisine.

The tableware is made by Shiro Yoshii, ceramic artists from Kameoka, Kyoto, and is a visual feast.
Sake from Aramasa Sake Brewery and Kuroryu Sake Brewery are also available, as we believe that "Japanese cuisine is only as good as the sake". The restaurant always offers something that can be tasted as a combination of food and sake.

The interior of the restaurant, a renovated Japanese house, has a bare structure with the pillars left standing. The restaurant has a counter and tables that seat eight in an L-shape made of 150-year-old white Nara hinoki cypress with high quality chairs that do not tire. Visit "Oryori Matsumura" for a live-performance atmosphere at the counter, or at the tables for family, friends, business associates, dates, or for entertaining overseas guests.
