1-star French cuisine expresses the essence of ingredients from Hokkaido

1-minute walk from Hosui Susukino Station on the Toho Subway Line, “TATEOKA TAKESHI” is a 1-star French restaurant in a convenient location near Susuki, the busiest area in Sapporo.

Owner-chef, Takeshi Tateoka is from Otaru-city, Hokkaido. He went to France at the age of 24, and trained in "Les Templiers” in Vence, Southern France, "Restaurant du Palais Royal" and "Au Bon Accueil" in Paris. He also worked at a 1-star restaurant "Passiflore" and "NAMIKI" in Southern France. He was then entrusted with the role of Poisson Chef (fish chef) for 1 year at the 3-star restaurant "Maison Troisgros" in Roanne. After returning to Japan at the age of 31, he worked as a chef at the restaurant where he is now, and after that, he changed the name and concept of the restaurant and re-opened it as “TATEOKA TAKESHI”, in November 2016. In April 2017, just six months after its opening, it received one star in a world-renowned gourmet guide. The restaurant also won the 17th Toque d’Or Contest in the Minister of Agriculture, Forestry and Fisheries Awards.

We offer omakase courses using the best ingredients of the season, focusing on seafood and vegetables, in the hope that you will experience the natural aroma, taste, and essence of Hokkaido's ingredients. We hope you will enjoy our dishes with natural wines and the flavor and aroma of Japan's unique climate. Mr. Tateoka focuses on the "sense of ingredients”. The combination of ingredients, cooking methods, and temperatures are used to create a dish with a rich taste. This is a special dish created here in Hokkaido with Japanese ingredients and Tateoka's French experience. Using ingredients he makes himself (Hokkaido pickled plums, koji miso made from Tokachi soybeans, tomato seasoning made from Yoichi Amakko, and homemade seasoning fermented from ginger, radish, tomatoes, etc.), Tateoka's cuisine provides "a sense of ingredients”. Ingredients are purchased directly from trusted farmers and fishermen. We hope you will enjoy Mr. Tateoka's world view, in which he continues to consider the essence of ingredients on a daily basis.

The dishes at the restaurant were designed based on the image of the colors and shapes of Mr. Tateoka's cuisine and were custom made by artists and pottery artisans several years before the restaurant opened. There are about 500 kinds of wine on the drinks menu. They have a large selection of natural wines mainly from France, Hokkaido and around the world. In addition, they brew tea such as genmaicha and bancha every day, so that guests who do not drink wine can can enjoy it. The combination of the cuisine, dishes, bowls and drinks married together, complete a memorable gourmet experience for any guest that visits Tateoka.

A modern restaurant in white decor, with a spacious dining room and large tables that are well-spaced out meaning that you can relax quietly without worrying about other guests. In addition, 1 private room is available to reserve for 2 to 8 people and 3 seats at the counter. You can rest assured that an English menu will be prepared for foreign guests.     It was a very well executed dinner. Local produce cooked beautifully. Usually when we attended similar restaurants in Australia or overseas in Europe, we felt rather full even before the main course. Last night we were able to enjoy all the dishes. Perhaps it is our palate, we were very satisfied with the size and balance of the meal even the dessert. In some places that we have been, the dessert seems to be an afterthought. The serving staffs are enthusiastic but could do with a better explanation of the dishes. We were told what was in it but you can see from the printed menu which was provided. I paired mine with 3 glasses of wine for an extra 6000¥ and was worth it.
