In Shirokane, sushi prepared with original blend of vinegared rice, by the owner-chef who made the rounds of renowned sushi restaurants

In a quiet residential area about an 8-minute walk from Shirokane-Takanawa Station in Tokyo, the noren curtain lit by warm lights of a 1-star sushi restaurant “Sushi Matsuura" welcomes visitors. Osamu Matsuura, the young chef, moved from working at a fisheries company to becoming a sushi chef. In addition to working at several sushi restaurants, he was also responsible for launching new restaurants in Hawaii and Los Angeles for the "Sushi Ginza Onodera" chain, thus honing his skills on the world stage. After returning to Japan, he worked at "Sushi Masuda" (now closed) in Omotesando and was then in charge of a private-room counter in Ebisu’s "Sushi Kurusu", attracting many fans. He launched his own restaurant in September 2019 where he has been providing highly satisfying omakase course with the hope that young people will also enjoy authentic Edomae-style sushi.

"Sushi Matsuura" uses the finest ingredients that are purchased from Toyosu market every morning and employs aging techniques that require time and effort to bring out the umami of the seafood. The preparation techniques and creative talent the chef learned from famous restaurants shine. The rice used for sushi is an original blend prepared by a rice meister. Koshihikari and Akita Komachi varieties from Yamagata are cooked al dente in a hagama traditional rice pot. Two types of red vinegar made from Junmai Daiginjo sake lees from Wakayama of different ages are blended and only salt added to bring out the intrinsic flavor of rice. The house specialty is the conger eel nigiri sushi, and the restaurant has access to top-grade conger eels all year round thanks to the relationship of trust it has built with its buyers. Sake-steamed belt fish is also popular. Chef Matsuura goes to buy sake himself, and he always prepares about 10 kinds, such as carefully selected Junmai and Junmai Ginjo varieties known for their outstanding rice flavor. "Sushi Matsuura" stocks different types of sake each time rather than a selection of well-known brands for guests to enjoy.

The clean and bright wood-themed interior is filled with warmth reflecting Chef Matsuura’s character. At the L-shaped counter with eight to nine seats, you can enjoy conversing with the chef in true Edomae-style fashion while enjoying sushi and sake. This restaurant is suitable for a wide range of occasions, such as gatherings of family and friends, as well as for dates and business entertaining. It is recommended as a sushi restaurant to spend time with your loved ones and for showing hospitality to overseas guests.
