“Sushi Tatsunari”, which has been loved by various guests since it opened in Ginza in February 2017, will relocate to Hiroo, Tokyo and opened on April 21, 2020. The owner Tatsunari Iwama, who trained at sushi restaurants in Akasaka and Ginza, has determined to open also on Saturdays and Sundays.
Chef Tatsunari uses seasonal ingredients purchased from Toyosu market with the thought that "I want to make sure that the flavor of the ingredients is not destroyed" and serves only "Omakase course" for both lunch and dinner. Japanese dishes such as sashimi, grilled fish, steamed dishes and stewed dishes are served first, and then around 14 pieces of nigiri sushi that uses two types of vinegared rice. In particular, the chef puts a great deal of effort into tuna sushi, and it has excellent techniques to expand the possibilities of making tuna sushi by changing its resting time depending on its freshness and by using vinegared rice mixed with red vinegar only for tuna.
The restaurant has 8 counter seats made of Japanese cypress. It creates an extraordinary space where you can relax comfortably by with enough room between seats. Please use this restaurant for dates, receptions, and dinner gatherings.
