A favourite of sushi connoisseurs, this sushi restaurant in Nishiazabu prepares vinegared rice to match matured ingredients

Edomaezushi Sushi Tsu is located in a back street of Nishiazabu, an eight-minute walk from
Roppongi Station.

Since opening in 2008, this popular sushi restaurant is commonly frequented by sushi tsu, connoisseurs who dedicate themselves to the pursuit of fine sushi.

Since 2016, Nobutoshi Takahashi has been the chef of Edomaezushi Sushi Tsu. After training at renowned Japanese restaurant Buntokuyama at the Intercontinental Tokyo Bay for 11 years, he went to Korea to work as chef for Lee Jae-yong, the third-generation vice-chairman of the Samsung Group. Training under Mr. Matsumi Morita (of Ginza restaurant Kiyota) he assumed the position of chef at Sushi Tsu when he returned to Japan. A major draw for guests, Chef Takashi’s firm craftsmanship is based on a lifetime of experience.

Seasonal ingredients are both purchased from Toyosu Market and delivered directly from producers. The nigiri is a matured sushi that uses the traditional Edomae-style rice as the base, and the steeped seafood as the topping — the best examples balancing the sushi ingredients, vinegared rice and boiled soy sauce, impressing even the most experienced sushi connoisseurs. Tuna, a specialty, is usually allowed to mature for over two weeks before being cut for optimal tenderness, creating a sense of unity with the sushi rice. The seasonal sea urchin and conger eel are also popular.

Sushi Tsu always offers 50 varieties of sake from across the country, regardless of the production area, selected by Takahashi himself. Wine is poured by a sommelier, and pairings are available. Non-alcoholic beer and wine is also offered.

Approaching the restaurant via the basement, an immaculate spot garden greets guests, leading to a dining room that features 12 counter seats and 3 semi-private rooms (seating 4-6 guests). With each seat offering a view of Chef Takahashi gently preparing sushi, the restaurant is ideal for everything from business occasions and entertaining to private occasions with friends and family.
