Ginza is said to be a sacred place for sushi restaurants. Located in the basement of an unassuming building, in an alley across from the Kabuki-za Theater, awaits SUSHI GINZA ONODERA, a rapidly expanding establishment with locations in Los Angeles, Shanghai, New York, and London.

Akifumi Sakagami, the Executive Chef, began learning the craft of sushi at the age of 16 and, after 10 years of sharpening his skills at famous Sushi ZEN in Sapporo, he launched SUSHI GINZA ONODERA in April 2013. With an international imprint, the restaurant attracts devotees from all over the world.

SUSHI GINZA ONODERA bases its philosophy on the concept of sharing real Japanese culture with the world. To this end, classic dining styles such as Edomae-style sushi and traditional yakimono (grilled dishes) value the provision of food space. The restaurant’s staff go above and beyond to meet the expectations of each and every guest, who choose to dine at the restaurant among many others.

Seafood is carefully selected on behalf of the restaurant by trusted suppliers in Toyosu Market and from Hokkaido. The vinegared rice that forms the foundation of the sushi is made from the unparalleled Akita and Hitomebore varieties, finely adjusted by a five-star rice meister, and red vinegar with a strong umami component owing to its long fermentation process. This produces a well-balanced profile that enhances the flavor of the restaurant’s sushi toppings, which are cut into large pieces. Popular with guests, the torotaku roll (fatty tuna and pickles) that luxuriously wraps otoro is famous for an authentic taste inherited from Sushi ZEN in Sapporo, the originator of the torotaku roll.

The restaurant offers a range of wines and beverages, mainly from France, as well as an exclusive sommelier experienced in marrying the flavors of sushi with wine. Additionally, 30 kinds of sake are offered, with a wide seasonal variety of bottles available.

Inside SUSHI GINZA ONODERA, a ceramic wall created in collaboration with artisans Kyo Isesaki and Sakagami of Okayama (who possess the bloodline of Living National Treasures), imbues a modern Japanese feel to the space. A hinoki counter is carved by Fumitaka Tomita, a carpenter in Gunma. The passion for authentic Japanese is tangible in every detail.

There are 10 counter seats and 6 counter seats in a private room on the B1 floor of the main restaurant; meanwhile, there are 13 counter seats and a semi-private room accommodating up to four diners on the 2nd floor of the main restaurant.

Guests can enjoy the liveliness of SUSHI GINZA ONODERA in friendly, good-natured conversations between staff and guests in any situation, from dates, gatherings with friends, entertainment, and hospitality with overseas guests.
