A stylish and innovative new sushi restaurant in Minami Aoyama where guests can enjoy the marriage of Edomae-style sushi to superpremium fine wines and sake

About a 6-minute walk from Omotesando Station, the restaurant is located near the Nezu Museum. Although primarily a sushi establishment, Yoshinobu Kimura, a sommelier, has teamed up with Michimasa Nakamura, an Edomae sushi chef, to develop an innovative culinary experience not bound by genre.

Mr. Kimura studied restaurant management at an American university, and after graduating, worked as a sommelier at Japanese restaurant Megu in New York. After returning to Japan, he worked as a sommelier for Aoyama's world beating Narisawa for 10 years, rising to become head sommelier before opening Sushi m in 2019.

The "m" in the restaurant’s name stands for “marriage”; Mr. Kimura, a sushi lover who used to eat the dish on his days off, found a new direction inspired by his experiences overseas, pairing traditional Edomae sushi and dishes based around the theme of “rice and ingredients” with premium wines, sake, and non-alcoholic tipples. The “m” is lower case, as a curve, its flowing natural body more familiar to Japanese culture.

Wild plants with a slightly bitter flavour are served from spring to autumn. Winter signals a host of specialities, such as wild boar from Toyama and other hyperlocal dishes only available within a narrow seasonal window. Mr. Kimura tastes each ingredient daily, which influences his pairing decisions according to details such as variations in fish species, down to the fat content of a specific catch on a particular day.

Wine is chosen from a walk-in wine cellar with a 400-strong collection, and poured into delicate Superleggero glassware from Riedel, which is thin and lightly scented. A cellar is set to 0 to -15° C for the restaurant’s large selection of unfiltered raw sake, with 20 bottles always on offer; for example, Akira Aramasa sourced directly from the brewery, or Osaka’s Akika Sake Shibori, only offered in two other locations in Japan. The restaurant is also refining a lineup of non-alcoholic cocktails for diners seeking a third alternative pairing to wine and sake, with a focus on soaking seasonal fruits in fine teas.

As they step into the dining room, guests are greeted by an L-shaped counter seating up to 12 diners, and a drinks counter with the sommelier working behind it. The restaurant welcomes all guests at its twin counters, and presents an exciting setting for anniversaries and occasions with friends, loved ones, and business associates.
