Nihon Yakiniku Hasegawa Ginza, on the second floor of a building in Ginza 6-chome, offers Nihon/Yakiniku fare that combines traditional Japanese cuisine and yakiniku (Japanese-style BBQ). The result is a unique dining experience liberated from the conventional concept of yakiniku.

Chef Noriaki Masuda honed his culinary skills at Aoyama Club in Minamiaoyama and at other fine Japanese restaurants, and trained in cha-kaiseki cuisine (multi-course banquet meals served before tea ceremonies) at Izuchiku in Setagaya. At the restaurant, he offers yakiniku-kaiseki meals based on classical Japanese culinary techniques.

The delicate yakiniku served at Nihon Yakiniku Hasegawa Ginza is easy to enjoy. The restaurant’s yakiniku menu focuses exclusively on prime Kuroge Wagyu beef selected from around Japan, including A4 to A5 grade Matsusaka beef. Furthermore, meat is served not with sesame oil-based sauce but with a miso or soy sauce-based seasoning, a mix of seaweed salt from Setouchi and lemon, and premium wasabi from Amagi, Izu. This nourishing Japanese-style yakiniku is given an additional boost by Japanese home-pickled vegetables served together instead of Korean kimchi. Inside the dining room, each grill is equipped with air purifiers to remove smoke as it is produced, ensuring diners’ clothes stay pristine and free of unwanted scents.

The vegetables are sourced from the finest contract farms selected by the restaurant’s vegetable sommelier from around Japan. Among them, Hasegawa Salad with Fresh Vegetables, featuring small yet sweet baby vegetables dressed with olive oil and salty kelp, is particularly popular for its fresh flavor. Dishes featuring premium seasonal ingredients, such as matsutake mushrooms, crabs, and prawns, are served on Bizen, Karatsu, or Echizen ware or ceramics created by Koichi Uchida, a world-renowned Japanese ceramic artist.

Guests are invited to take a place at one of the eight seats at the L-shaped counter, where they can enjoy watching the chef and kitchen staff preparing and serving meat and vegetables, in the style of a sushi counter, or at one of the restaurant’s tables, where premium beef arrives beautifully presented on Japanese ceramics. For special gatherings, private rooms are also available.
