In Ginza 8-chome, a neighborhood brimming with high-end sushi restaurants, Ginza Sushi KANESAKA stands out for exquisite sushi renowned amongst the genre’s greatest connoisseurs. In fact, this one-star sushi restaurant has never lost its popularity since opening in 2000.

Ginza Sushi KANESAKA is helmed by Chiba-born chef Shinji Kanesaka. After graduating from culinary school, he trained at renowned sushi restaurants in Ginza and other cities. Well-trained physically and mentally as a baseball player in his high school days, he also distinguished himself in the culinary world and opened his own restaurant, Ginza Sushi KANESAKA, in 2000.

Chef Kanesaka puts the most emphasis on the harmony of seafood, sushi rice, and wasabi. The preparation of seafood and the temperature and consistency of sushi rice are tuned according to the ingredients available on the day so that sushi will start melting as soon as you put it in your mouth. The chef also makes careful arrangements that account for the preferences of individual guests -- this exceptional expertise and attention to detail is the very reason why the restaurant receives great loyalty from patrons.

As well as superlative sushi, Ginza Sushi KANESAKA also offers a wide variety of red, white, and sparkling wines, as well as sake to meet the preferences of different customers. The sake list includes Kiku-Masamune from Hyogo and Koshi no Kanbai from Niigata as well as Suigousakari selected by the chef from his home prefecture of Chiba for its harmonious balance.

The dining room at Ginza Sushi KANESAKA was inspired by a combination of Japanese architecture and art; the interior is inspired by traditional Japanese tearooms of the Edo period (17th to 19th centuries) and fabricated by craftsmen. It is adorned with paintings of Mount Fuji by world famous artists, including Hokusai, since the location used to offer a view of the beautiful mountain.

A new straight counter made of 300-year-old solid hinoki cypress (with eight seats) was set when the restaurant was renovated in 2020. At the counter, the supreme sushi made by Chef Kanesaka is served on exquisite antique plates, including antiquities dating back to the Momoyama period (16th century), elegant modern plates, and ceramics by the renowned artist Rosanjin Kitaoji. For dining in this stylish restaurant, smart casual attire is recommended.
