A local specialty Hitsumabushi restaurant with direct access from Nagoya Station

Opened in 2016 and specializing in Nagoya’s regional dish of Hitsumabushi – unagi (freshwater eel) grilled over Bincho coals – this cozy restaurant is located on the third floor of the Dai Nagoya building with direct access from Nagoya Station.

One of Nagoya’s specialties beloved by both locals and visitors, Hitsumabushi is made with fatty unagi, grilled slowly over the indirect high heat of Bincho charcoal until crisp on the outside and tender throughout. The dish is served with freshly cooked rice and a dipping sauce prepared by blending tamari soy sauce and mirin from Aichi. In particular, Hitsumabushi is characterized by how it is eaten, as a multi-course meal that allows guests to enjoy the dish unadorned and with a variety of condiments, before being experienced as a light risotto-like dish with the addition of a flavorsome broth. Thus, guests can enjoy three different flavors of the star ingredient in a single dish.

Hitsumabushi Nagoya Bincho also offers a wide selection of alcoholic and soft drinks for diners to enjoy with their meal. The sake list includes Kamoshibito Kuheiji and Gikyo from Aichi; Hyakujuro Akazura and Hyakujuro Kurozura from Gifu; Chikuha Noto Junmai from Ishikawa; Sawaya Matsumoto from Kyoto; and Suzune from Miyagi, all served by the glass, carafe, or bottle. Several shochus are offered by the glass, including Sato (Kuro) from Kagoshima as well as sweet potato, barley, and rice shochus. Moreover, the drink menu includes carefully curated alcoholic drinks, such as Shirohonoka Beer, Dewar’s Highball, and Taittinger, as well as soft drinks, such as Gerolsteiner sparkling mineral water and grated apple juice.

The restaurant’s interior boasts a luxurious Japanese design with warm wood accents and large windows that offer a sense of space and a spectacular view of the vibrant streets around Nagoya Station. With private rooms, this restaurant is perfect for a variety of occasions, both leisure or business related.
