Unagi is appreciated for its nourishing properties and prepared using different methods according to the region. For example, in the Kanto region, it is cut open along the back, grilled quickly, and then steamed, whereas it is cut open along the belly and simply grilled in Kansai. At this popular restaurant family’s location in Ginza, unagi is cooked in Nagoya’s authentic Hitsumabushi style.

Following the traditional cooking style of Nagoya, their Hitsumabushi is prepared using fatty unagi; not steamed, but expertly grilled over the indirect high heat of Bincho charcoal until crisp on the outside and tender on the inside. The unagi is then dipped in a sauce prepared by blending tamari soy sauce and mirin from Aichi, and served with freshly cooked rice.

Nagoya-style Hitsumabushi is characterized by how it is eaten, as a three-course meal that allows guests to enjoy the dish unadorned and with a variety of condiments, before being experienced as a light risotto-like dish with the addition of a flavorsome broth. Thus, guests can enjoy three different flavors of the star ingredient in a single dish.

The drink menu offers a wide variety of sake and wines to thrill gourmets attracted to Ginza. The sake list consists of 20 varieties from around Japan, including Kamoshibito Kuheiji and Gikyo from Aichi; Kuzuryu from Fukui; Juyondai from Yamagata; Kikuhime from Ishikawa; Shimeharitsuru from Niigata; Sawaya Matsumoto from Kyoto; Dassai from Yamaguchi; and Nishinoseki from Oita. The wine list offers a great selection of bottles, mainly from France, including Champagne Henri Giraud, Puligny-Montrachet, and Vosne-Romanée, as well as Opus One wine from Napa in the U.S.
