A restaurant which challenges the fusion of French and other cuisine

Defi-Georges Marceau was opened in December 2012 and it is the sister restaurant of Georges Marceau by the owner chef Koji Konishi. There are many high-class restaurants located in the downtown area of Fukuoka, and Nishi-nakasu is said to be the most fashionable area among all. It is located on the 2nd floor of a building next to Tenjin Central Park (the guest house side), and thanks to the restaurant's large windows, the view of the greenery and warm sunlight create an outstanding comfort.

The head chef is Kouji Matsuoka. After his training at Leau a la bouche (Aoyama, Tokyo) and Restaurant Hiramatsu in Fukuoka, he worked hard under Mr. Konishi at restaurant Georges Marceau. The word Defi in the restaurant name means challenge in French. Based on French dishes, there is a concept of cuisine which blends dishes from various countries, and provides ingredients sourced on the same day with the best cooking method. The ingredients are carefully selected from trusted Kyushu producers, and vegetables are sourced from the Koga berry Farm (Taku Saga) and from the garden of Matsuoka’s parents. The seafood includes live fish sourced from Shimazaki (Saga and Karatsu) and uses only the freshest fish.

The recommended dishes are those which use fresh vegetables from farms in the Fukuoka suburbs and Matsuoka’s family vegetable garden. Also the Kyushu premium curry which is made with a variety of cooking methods. The curry is also served on the luxury train, Seven Stars in Kyushu, and it is also a dish which represents Georges Marceau’s concept of focusing on Kyushu ingredients. In addition, although the wine list includes many French wines, there are also wine from the Ajimu Winery and Kumamoto Winery.

The wooden style of the restaurant's interior creates a warm atmosphere, along with the show plates, butter knifes and chopstick rests, which are also made of wood. The restaurant's cutlery has a functional beauty, made by Toshihiro Kouzuma, a woodcrafter from Kumamoto, and the restaurant's chopsticks are procured from the Ichiharahei store in Kyoto City, which further enhance the dining experience.
