It is relatively hard to have authentic Edomae-style sushi especially in Shinjuku. Usually, customers can only enjoy sushi in hotel restaurants, but Sushi Sagane in Nishi-Shinjuku is an ideal sushi restaurant there. Even though it is a small restaurant with only 6 counter-seats, it is very cozy and neat. There is a refreshing space with sakura motif behind the sliding door. The young chef's sushi making skill is so eye-catching that customers will forget about the hectic city.
The restaurant was opened in 2011. In spring 2017, Mr. Hideki Yamaguchi took over the restaurant and it was reopened after renewal. After graduated from a culinary institute, Mr. Yamaguchi was trained in a sushi restaurant in Tokyo for ten years. "No music is played in the restaurant because I also want the customers to enjoy the sound of slicing the fish," said Mr. Yamaguchi. He wants to promote the tradition and attractive point of Edo-style sushi to the young generation and foreign guests.
He gets the ingredients from Tsukiji market. The signature dishes are boiled prawn, eel and dry calabash from chef's hometown Tochigi.
His homemade cuisine matches well with sake.The sushi rice is made right before customers arrive, it is cooked in a traditional rice cooker and mixed with rice vinegar and red vinegar. He uses pesticide-free 「Fuji vinegar」 from Iio Jozo Vinegar Brewery in Kyoto.
In addition, he also uses dishes that match with the cuisine, such as glass and ceramics. "I want customers to think of our restaurant when they want to have sushi. " said the owner. It is a sushi restaurant with many young sensibilities.
