"Sakana Kui Kiri Soshi" opened in April 2014 in Nakanotana, the heart of Hiroshima’s busy downtown area. The business can trace its origins back to before the Edo period, as Hiroshima’s very first fish market. "Sakana Kui Kiri Soshi" is famous for being the hardest sushi restaurant to get a reservation in these days in Hiroshima Prefecture.
The chef of "Sakana Kui Kiri Soshi" is Mr. Soshi Satani. Soshi started work at a sushi restaurant after graduating cooking school, but later changed occupations to work as a marine products wholesaler in order to be able to pursue his passion for fish. He worked in the industry for 17 years and then opened "Sakana Kui Kiri Soshi" when he felt the time was ripe. The restaurant has become popular for the individuality of its dishes, which are not limited by the typical sushi restaurant concept.
To source fish, Soshi visits the fish market each morning. He assesses the quality of the fish himself, drawing on his experience from the time he worked selling marine products. For the vinegared rice, he uses Akisakari rice grown in Hiroshima. To create the vinegar, he blends red vinegar with premium rice vinegar made from eight times the standard amount of rice. He also chooses wasabi grown in Hiroshima, thus unifying the sense of terroir. Food can only be ordered as “Setouchi-Mae” in Japan’s Omakase (Chef's Selection) style, which leaves all food item selections up to the chef. First to be served will be 6 or 7 seasonal hors d'oeuvres. This will be followed by about 10 pieces of sushi. "Sakana Kui Kiri Soshi" stocks about 20 different kinds of sake, chiefly local sake produced in places such as Hiroshima, Yamaguchi, and Shimane in the Chugoku region.
The entrance to "Sakana Kui Kiri Soshi" is through an antique English door hidden in the dark in a corner of a shop that has its shutter/shutters drawn. The restaurant has only 14 counter seats, and with low lighting, is designed to be an atmospheric space. Soshi strives to be one of a kind in Hiroshima. We invite you to visit and enjoy his sushi.
