Enjoy authentic Japanese cuisine with a sense of the four seasons at the counter in Higashi-Azabu

Since opening in 2015 as an introduction-only restaurant, Suikouan has steadily built up a track record as a restaurant that values the framework of Japanese cuisine in accordance with the principles of ”Yusoku kojitsu”.

Suikoan is helmed by Chef Tomohiro Ishida, born in Tokyo in 1979. He worked at Kyoto Kitcho and served as a sous chef at Kitcho Arashiyama Main Location from 2008 to 2014.

Chef Ishida offers Japanese dishes featuring seasonal ingredients to celebrate the seasonal bounty of Japan. With deep respect for the fundamental concepts of Japanese culture, such as the practices of court and samurai culture and the 24 seasonal divisions of the lunar calendar, the chef strives to deliver not only the flavors of the four seasons but also the spirit of Japanese culture through his dishes, such as an assortment of appetizers that changes every month. The menu features seasonal ingredients from around Japan, including bamboo shoots from Yamashiro, Kyoto, in the spring, sweetfish from Kyoto in the summer, and Taiza crab in the winter. As for the rice, Ryu No Hitomi, a brand of rice known for its large grain, is sourced from Gifu and cooked several different ways. First, slightly undercooked rice is served with wet chopsticks made of cedar to show chakaiseki cuisine’s spirit of hospitality.
The sake list offers a wide selection of rare Japanese sake, including Juyondai. In addition, Suiko, a private label sake, is brewed by Hakusen Shuzo, the same brewery as Kitcho’s, in Gifu. The wine list includes 20 to 30 labels of wines selected by the dedicated sommelier, mainly from Burgundy in France.

After the relocation in June 2023, the restaurant will have a new 8-seat counter where diners can enjoy the live cooking experience. Come visit "Suikouan" to enjoy food with friends and the seasons.
