A new branch of Kashiwaya Osaka Senriyama, a three-star restaurant, located in Kitashinchi, Osaka, that offers Japanese cuisine inspired by the four seasons

Perched on the fifth floor of a building in Kitashinchi, one of the busiest entertainment districts in Osaka, Kashiwaya Osaka Kitashinchi opened its doors as a branch of Kashiwaya Osaka Senriyama, a three-star restaurant, in 2022. This branch is helmed by Chef Atsushi Takahashi, who honed his culinary skills at the main location and worked as Chef at Kashiwaya Hong Kong.

The second-generation owner and General Chef of Kashiwaya, Hideaki Matsuo, says the Kitashinchi branch is a new challenge for Kashiwaya. The new branch only has a counter that seats eight while the main location allows diners to enjoy kaiseki cuisine in private rooms. The culinary heritage of Kashiwaya handed down to Chef Takahashi is reinterpreted by the chef to tingle the taste buds of guests.

The prix-fixe menu consists of 11 courses, ranging from appetizers to fruits and desserts. The traditions of Japanese cuisine rooted in Kashiwaya are combined with modern innovations to weave stories of the four seasons. The stock is made with bonito flakes and Japanese natural kelp from southern Hokkaido (Shiroguchihama), carefully selected for Kashiwaya by Konbu Doi, a kelp wholesaler in Osaka. The rich flavor of the stock is particularly prominent when it is used for soup. ”Unryuyaki,” a specialty of Kashiwaya inspired by a French soufflé and arranged with seasonal ingredients, has also been handed down to the branch. “Hamomatsu,” a matsutake mushroom roll wrapped with pike conger grilled over charcoal, is another popular seasonal dish.

Like the main location, which pairs drinks with Japanese dishes, Kashiwaya Osaka Kitashinchi offers food and alcohol pairings, suggesting a small glass of liquor, wine, and Japanese sake for each course to enrich the seasonal menu as intended by Chef Takahashi. The seasonal elements are further enhanced by the interior with a counter made of Yoshino Hinoki Cypress and Japanese washi wallpaper designed under the art direction of Somenotsukasa Yoshioka, a dye shop in Kyoto dating back to the Edo period (200 years ago).
